When and How to Harvest Tomatoes

Knowing when to harvest is crucial — pick too early and you miss flavor, too late and you have waste.

Signs a Tomato Is Ready

  • Full color development (variety-dependent)
  • Slight give when gently squeezed
  • Fruit separates easily from vine
  • Glossy skin turns slightly matte

Harvest Tips

  1. Harvest in the morning when cool
  2. Use scissors or twist gently — don't pull hard
  3. Harvest red and heirloom varieties at full color
  4. Green tomatoes can be ripened indoors at room temperature
  5. Never refrigerate — destroys flavor and texture

End of Season

Before first frost, pick all mature green tomatoes. Ripen in single layers at room temperature. A ripe tomato will hold 1-2 weeks at room temperature.
